

Brasserie Guillaume was founded in January 2015 in Cour-Cheverny, between the Loire and Sologne.
The oldest brewery in the Loir-et-Cher region, it was a pioneer in wine-growing country.
Originally from the north of France, Guillaume Leclercq, the brewer and manager, first worked as an agricultural engineer, then as an oenologist for twelve years in various vineyards in France.
Sébastien, who previously worked in the restaurant trade in Paris, returned to his native region and the brewery in 2020 to take charge of marketing.
Our aim is to remain an independent, responsible craft brewery on a human scale, producing local beers from local raw materials and distributing them via short distribution channels (delivery within 1 hour of the brewery).
80% of our beers are brewed with barley grown in the Vendôme region of Loir-et-Cher, in accordance with the principles of Soil Conservation Agriculture. A multi-year contract is signed between the farmer and the brewery (with prices and volumes fixed to provide security for both parties). The barley is then malted (forced germination and drying, which are necessary before it can be used in brewing) by the small-scale malting plant in Cloyes sur le Loir, 20 km from the fields.
We also work with producers in the Loir-et-Cher to create our special beers: grape juice, honey, strawberries, chestnuts, lentils, etc.
